Dear MBE Family,
WOW! What happened to January??? The beach ride was great. Yep, for those of you that did not take the chance, it was beautiful. Really, no rain. It was a little cold in the morning, but warmed up for us in the afternoon. As usual, the food was great. Thank you to Susan and Shawn for taking pictures, Jo Price for entertainment and Camp Daddy, Harry Price for setting up stuff, Mike G. for amazing chili and everyone for pitching in with food. We had a fun time.
I am hoping to hear from you about things you would like to see, do, or hear in this coming year. Goals you would like to bring to the board, guest speakers you would like to suggest or have us look into. In other words, what direction would you like to see our club go in? I know meetings can be routine so if you want to see a change in that please let me know. I am looking forward to this year and all the campouts, rides and just plan fun with our horses.
And now for the recipe of the month:
Stuffed Molasses Apples
- 2 apples
- 1 cup bran
- 1 carrot, shredded
- 3/4 cup molasses
- 1/2 cup brown sugar
- 1/2 cup sweet feed
- Confectionery sugar
Core 2 apples and dig out as much of the center as you can—as you would a pumpkin at Halloween.
Mix shredded carrot with bran, molasses, brown sugar and sweet feed in a large bowl.
Add more molasses or ban to give mixture a stiff consistency.
scoop mixture out of the bowl and press into cored apples.
Sprinkle with confectionery sugar and serve immediately! Serve in a feed bucket as this is a gooey treat.
