In like a lion out like a lamb, that is going to be March. We only have a week of March left, I don’t know about you, but where did it go?? Oh the 1st day of spring has come. I am seeing proof of that in the trees, plants, wild flowers on the rides I have been on. Fort Ord is stunning right now. Maribeth has been my tour guide and the places she has taken me are wonderful. As I write this our 1st camp weekend is in full swing. I was planning on going, but this work thing got i n the way. And I need that job thing so I can keep my horses in the lifestyle they have come accustom to. It has been so wonderful to be back in the saddle again. Johnny and I have been on the trail every weekend, since the rain stopped. It truly fills my soul.
I am so excited about the Poker Ride. I am trying out new jobs this year, and my hubby will be in his element in the kitchen with all the girls. I have been collecting prizes for the prize corral. I would not want Margaret and her team to be disappointed. Remember, please bring your donations to the April meeting, This makes it so much easier on Margaret to get the items before the ride. But of course, if you can not please do your best to get them to her as soon as possible that week end.
And for the recipe of the month:
Carrot Crispies
- 2 carrots, shredded
- 1 apple, chopped in small pieces
- 1/3 cup molasses
- 1/2 to 3/4 cup bran
- triscuits ( or other salty crackers)
Combine carrots, apple, molasses and bran, mix thoroughly. Scoop a small ball onto triscuits and refrigerate overnight. Carrot Crispies will hold their shape if they are kept cool, but be careful: they get somewhat crumbly at room temperature. Makes six to ten crackers.
