To my MBE family,
Wow the Poker ride was a blast. The wild flowers were the best I have ever seen them. The food, friends, and fun was off the charts. And once again the weather goddess was on our side. I don’t know how we do it. And did I mention the food. I would like to say again, a BIG thank you to Mike and Patti Garcia and their amazing team of cooks, grounds guys and general keep it together crew. Without that team it just wouldn’t be the same. And a BIG thank you to Liz Gheen, Margaret Pare, for chairing their departments and doing it with such skill, grace and fun. Alicia, thank you for once again doing the chore of the poker hand filing. To all of you that did your part in helping each department to be the best ever. Without the team work and cooperation of each and everyone that worked so hard to keep MBE’s poker ride that BEST around we would not rock like we did. The feed back was wonderful, our guests were delighted with every part of our hard work.
Also our ride chair is working on a replacement ride for the May 29-31 camp out at the Gould Ranch. That has been canceled. So stay tuned for an update on that week-end.
I’m feeling dessert so here is the horsey recipe for the month:
Microwave Peanut Brittle
- 1 cup sugar
- 1/2 cup corn syrup
- 1 1/2 cups rolled oats
- 1/2 cup corn meal
- 1 cup bran
- 1 teaspoon butter or margarine
- 1 teaspoon baking soda
Lightly grease a cookie sheet and set aside. In a microwave-safe container, stir together sugar and syrup. microwave on high for 4 minutes caution: the syrup gets very hot and may spatter. take out and carefully stir in dry ingredients until mixture is dry and crumbly. Microwave again on high for 3 to 5 minutes. remove and stir in butter. again careful. microwave a third time on high 1 to 2 minutes. Add baking soda quickly to mixture and pour onto greased cookie sheet. flatten with greased spoon. Score brittle with knife or pizza cutter into 1 inch by 2 inch squares. When mixture is cool, break apart along scores and store in an airtight container.
mixture must reach 300 degrees to create the hard crack stage. undercooking will result in a chewy, sticky biscuit. you can reheat mixture for up to 4 minutes to reach the hard crack stage.
